Like a salad bar with its mix and match offerings, Mangini's (The Vegetable Butcher, 2016) second cookbook provides readers not only with specific recipes, but also with a general guide on how to build vegetarian salads, soups, stews, burgers, and more. Formulas for grain bowls, for example, outline how to create one with any ingredients on hand (whole grain + vegetable + legume + sauce)--though one may not feel like going rogue when Mangini's recipes are so inviting. Colorful pairings invigorate all seasons in dishes like kale and watermelon panzanella, Parisian-style lentil and crudits salad, and cannellini beans with orange-pistachio-kale gremolata. Carrot-cilantro fritters with tahini-lime yogurt sauce burst with flavor, and macadamia-crusted kohlrabi steaks with orange beurre blanc elevate vegetarian fare to the top of its game. Comfort foods that provide a healthier alternative to meat include cauliflower enchiladas with pumpkin-chipotle cream and sesame-peanut noodles. With crisp photos and a clean layout, Mangini's low-hassle and lighter recipes will inspire both habitual vegetarians and carnivores looking to take on lunches and suppers in more cruciferous style.
